What do you do when you get tired of banana bread? Apple bread is just as easy, and possibly even more delicious. The streusel topping is optional but it adds a nice sparkle and crunch.

Ingredients:
2 cups grated apple
3/4 cups olive oil (or vegetable oil)
3 large eggs
1 teaspoon vanilla
1 cup brown sugar
2 cups flour
2 teaspoons cinnamon
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Topping Ingredients:
1/4 cup butter softened
1/4 cup brown sugar
1/4 cup rolled oats
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:
- Preheat oven to 350F
- Butter and flour 9×5 inch loaf pan
- In a small bowl whisk together flour, cinnamon, baking powder, baking soda, and salt
- Using the large holes of a box grater, grate two apples into a large bowl
- Whisk together grated apples, olive oil, eggs, vanilla, and brown sugar
- Gently fold dry ingredients into wet, being careful not to over mix, pour batter into prepared pan
- In a small bowl mix together softened butter, sugar, cinnamon, sugar, and oats until it reaches a crumb like consistency
- Sprinkle topping over batter
- Bake in centre of oven for 50-55 minutes
