Apple Cinnamon Bread

What do you do when you get tired of banana bread? Apple bread is just as easy, and possibly even more delicious. The streusel topping is optional but it adds a nice sparkle and crunch.

Time: 20 minutes Active 60 minutes Bake time

Serves: 12

Ingredients:

2 cups grated apple

3/4 cups olive oil (or vegetable oil)

3 large eggs

1 teaspoon vanilla

1 cup brown sugar

2 cups flour

2 teaspoons cinnamon

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Topping Ingredients:

1/4 cup butter softened

1/4 cup brown sugar

1/4 cup rolled oats

1/2 teaspoon cinnamon

1/4 teaspoon salt

Steps:

  1. Preheat oven to 350F
  2. Butter and flour 9×5 inch loaf pan
  3. In a small bowl whisk together flour, cinnamon, baking powder, baking soda, and salt
  4. Using the large holes of a box grater, grate two apples into a large bowl
  5. Whisk together grated apples, olive oil, eggs, vanilla, and brown sugar
  6. Gently fold dry ingredients into wet, being careful not to over mix, pour batter into prepared pan
  7. In a small bowl mix together softened butter, sugar, cinnamon, sugar, and oats until it reaches a crumb like consistency
  8. Sprinkle topping over batter
  9. Bake in centre of oven for 50-55 minutes
