Best Bran Muffins

This classic bran muffin recipe can be loaded with dried fruit, or enjoyed without. Perfect for breakfast, snack, or lunch, we always have a bag of these in the freezer.

Time: 25 (5 active)

Serves: 12 muffins


1 1/2 cup bran

1 cup buttermilk

1/2 cup brown sugar

1/3 cup olive oil

1 tablespoon – 1/4 cup honey

1 teaspoon vanilla

1 egg

1 cup flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup dried fruit (optional)

  1. Preheat oven to 375F and line a 12 well muffin tin with liners or grease with butter
  2. In a large bowl combine bran and buttermilk and allow to stand for 3-5 minutes
  3. To the bran mixture add sugar, honey to taste, oil, egg, and vanilla and mix to combine
  4. Add flour, baking soda, baking powder, and salt to mixture and fold in with a spatula until just barely combined, do not over mix
  5. Fill 12 muffin cups and bake for 18-20 minutes
