
This classic bran muffin recipe can be loaded with dried fruit, or enjoyed without. Perfect for breakfast, snack, or lunch, we always have a bag of these in the freezer.

Serves: 12 muffins
Ingredients:
1 1/2 cup bran
1 cup buttermilk
1/2 cup brown sugar
1/3 cup olive oil
1 tablespoon – 1/4 cup honey
1 teaspoon vanilla
1 egg
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dried fruit (optional)

Steps:
- Preheat oven to 375F and line a 12 well muffin tin with liners or grease with butter
- In a large bowl combine bran and buttermilk and allow to stand for 3-5 minutes
- To the bran mixture add sugar, honey to taste, oil, egg, and vanilla and mix to combine
- Add flour, baking soda, baking powder, and salt to mixture and fold in with a spatula until just barely combined, do not over mix
- Fill 12 muffin cups and bake for 18-20 minutes
