
I was recently gifted a bag of cedar isle farms wheat whole grain flour; made with 100% of the grain, this flour contains more nutrients and more flavour than ordinary flour. The best way to reap the benefits of a truly flavourful flour is shortbread, so in honour of Valentine’s Day E and I made shortbread hearts. We decorated them with lashings of dark chocolate, toasted almonds, pumpkin seeds, and dried cranberries – one of the healthiest and tastiest Valentine’s treats I’ve ever had.
Ingredients:
8 oz Grass-fed butter at room temperature
2 oz sugar
10 oz whole grain wheat flour
Steps:
1. Preheat oven to 300F
2. Cream butter and sugar until pale and fluffy
3. Stir in flour until mixture resembles coarse crumbs
4. Tip mixture onto a floured surface and shape into a disc, roll dough to a thickness of 1/4-1/2 inch
5. Cut shapes and arrange on parchment lined baking sheet
6. Using a toothpick or fork poke decorative holes in cookies (optional)
7. Bake cookies for 20-30 minutes (depending on thickness)
8. Once cookies have cooled drizzle with melted chocolate and top with nuts, seeds, and berries
