
A good waffle recipe (and a good waffle iron) is something everyone should have on hand. Not only are waffles delicious for breakfast, smothered in syrup or whipped cream. They also make an excellent base for savoury meals.
We enjoy these waffles freshly made, but I often double the recipe so that I have leftovers to put in the freezer. On mornings when there’s no time to cook, these waffles fit perfectly in the toaster.
Makes 4 Servings
Time: 30 minutes
Ingredients:
6 1/2 oz (1 1/3 cup) flour
1 1/2 oz (1/4 cup) icing sugar
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
7 oz plain greek yogurt
7 oz milk
2 large eggs
1 1/2 oz (3 tbsp) melted butter
1 tsp vanilla extract
Steps:
- Heat waffle iron according to medium
- In a large bowl whisk together flour, sugar, salt, baking soda and baking powder
- Add yogurt, milk, eggs, melted butter and vanilla and whisk to combine
- Cook waffles and serve immediately
