Recently Elena and one of her friends took a cooking class. One of their favourite items to cook was pita bread. It’s a great way to learn about how bread works. The recipe is forgiving, the kids can get their hands dirty, and the pitas cook quickly.
Ingredients:
1 cup lukewarm water
2 teaspoons active dry yeast
1/2 teaspoon sugar
35 grams or 1/4 cup whole wheat flour
310 grams or 2 1/2 cups unbleached all purpose flour
2 teaspoons salt
2 tablespoons olive oil

Steps:
- Combine warm water, yeast, sugar, whole wheat flour in a bowl and whisk to combine and let rest for 10-15 minutes
- Add 2 cups of flour(reserve rest for kneading), salt and olive oil and mix to combine with a wooden spoon until a ball forms
- On a floured surface knead the dough for two minutes, cover and let rest for ten minutes, then knead for another two minutes
- Place the dough in a clean, lightly oiled bowl and cover. Allow dough to raise until it has doubled in size (approximately 1 hour)
- Heat a cast iron pan on medium heat
- Divide dough into 8-10 equal balls and roll into thin rounds
- Place a round on the lightly oiled pan, flip with tongs as soon as the round has puffed. The pita bread will need 1-2 minutes per side
- Place pita breads on a cooling rack
